Josh Untoshi Kraft is a To-Shin Do 3rd Degree Black Belt and Chief Instructor at Quest Self-Defense. Born in Gainesville, Florida, Josh brings a unique blend of discipline, creativity, patience, and quiet strength to his martial arts training and teaching.

Before becoming a martial arts instructor, Josh built a professional background as a chef, where precision, timing, awareness, and calm under pressure were part of everyday life. Those same qualities now shape his approach on the mat. For more than 12 years, he has trained under the direct guidance of Master Mark Sentoshi Russo, dedicating himself to the study and practice of To-Shin Do.

Josh’s path has also been shaped by a life-changing motorcycle accident, which became a turning point in his journey toward mindfulness, resilience, and personal growth. That experience deepened his commitment to meditation and eventually inspired him to write and publish a book on the subject.

Today, Josh is known for his calm presence, compassionate teaching style, and ability to help students feel supported while still challenging them to grow. His martial name, Untoshi, meaning “Warrior of the Tranquil Blade,” reflects the balance he works to embody: peaceful in spirit, focused in action, and capable when needed.

Through martial arts, meditation, and steady personal practice, Josh helps students build practical self-defense skills, confidence, focus, and a stronger sense of what they are capable of becoming.
